Pallubasa is the soup that the Bugis sailors carried in their memory across the Indian Ocean. The name pallubasa is derived from the Bugis words palu (to hit or crush) and basa (spices), referring to the grinding of the spice paste that gives the dish its soul.
Unlike Soto Makassar, which is a clear, turmeric-based broth, pallubasa is thicker, richer, and more intense. It is a curry of the sea—a dish that carries the heat of the equator and the depth of the ocean, a dish that was once served to returning sailors as a welcome home.
