Lapis Legit is a rich, layered Indonesian cake — a dense, buttery cake with multiple thin layers, baked layer by layer, often served during festive occasions such as Eid, Christmas, and Chinese New Year.
The cake is also known by its Dutch name, “Spekkoek,” reflecting the colonial influence on Indonesian cuisine. The cake is made from butter, eggs, sugar, and a blend of spices such as cinnamon, cardamom, clove, and nutmeg, reflecting the spice route that connected the archipelago to the world. The batter is baked in thin layers, one at a time, under a broiler, creating a cake that can have up to 30 layers.
